Speedy Vegetable Stir Fry

As is probably clear by now, I often have produce hanging around my kitchen that I struggle to use before it goes bad.

In this case, I had three perfectly wonderful bell peppers to use.

Then, inspiration struck me: vegetable stir-fry.

This may sound intimidating for anyone unfamiliar with cooking Asian-style meals, but it actually couldn't be easier.

Tacos and Burritos: Simple and Fast

I really like Mexican food, and tacos and burritos are some of my favorite things to make.

Tacos and other Mexican food may seem complicated because they usually have tons of toppings, but if you use a taco seasoning mix, you can have a delicious meal in a little over 15 minutes.

Couscous and Why It Rocks

Today's special post focuses on the wonder food that is couscous.

Besides its rocking name, couscous is one of the simplest foods you can possibly make. It's a great staple food and is common in Morocco, Libya, and many other countries.

However, perhaps some of my newbie chefs are intimidated by couscous' name. Like quinoa (which, by the way, is also delicious and super easy to cook), beginner cooks might be hesitant to make something they can barely spell, let alone pronounce.

But have no fear! Today's post will explain couscous and calm any concerns about making it. Read on!

Simple Eggs in a Basket

Today's recipe, as is probably unsurprising by now, is rooted in my Italian heritage: eggs in a basket.

I was first introduced to this recipe by the movie "Moonstruck," starring Cher and Nicholas Cage (yes, you read that correctly). In the film, Cher and her super Italian family make her this delicious breakfast as a pick-me-up.

And seriously, this is the quickest, easiest, yummiest breakfast (or snack) ever.

With only two ingredients and some ever-fabulous canola oil, you can have a healthy breakfast in under 10 minutes. Read on for the recipe!

5 Tips for Healthy Eating When Traveling

Me in front of Stonehenge!
Traveling is one of my favorite things to do. All the new people, experiences, and--most important--food always make trips rewarding opportunities for me to grow and learn.

That being said, I constantly struggle with healthy eating when I travel. Depending on where you go, it can be next to impossible to find something as simple as a green salad.

Ever had a similar issue? Read on for some tips that I've learned through hard-earned experience about healthy eating while on vacation.

What Should I Eat When I Travel?

Hey everyone! I just got back from a week-long trip to London, England.

The trip itself was fantastic (there's me on the right, hamming it up!), but the vacation reminded me how difficult it is to stay healthy while traveling.

Stay tuned in the next few days for a special post about healthy eating when you travel. I'll provide a few tips I--and others--have gathered from hard-earned experience.

Until then, KEEP ON COOKING!

Turkey Meatballs

As an Italian, I have a deep and abiding love of meatballs. However, I don't eat red meat very often--which traditional meatballs are made with--and turkey meatballs are notoriously dry.

So how did I remedy this with my own recipe for meatballs? Read on to find out.

Part 3: Coffee Cake in a Mug

I've always loved coffee cake. There's something about the sour cream and sugar combination--not to mention the crumb topping--that my tastebuds love.

Still, coffee cake requires a lot of sour cream and a decent chunk of time to make.

That's where the delicious Coffee Cake in a Mug comes in.

Part 2: Banana Bread in a Mug!

One of the toughest parts of college living is using produce before it goes bad.

I personally struggle the most with bananas, and although I love banana bread, it does take a while to bake.

Cue Banana Bread in a Mug!

Part 1: Chocolate Chip Cookie in a Mug

I was recently introduced to the glory that is cooking cookies in a mug. For those of you who don't have the time, space, or patience to make an entire batch of cookies, these are the recipes for you.

I say recipes because searching "cookie in a mug" on the Internet introduced me to a rabbit hole of delicious baking ideas I just had to try.

Needless to say, I found tons of awesome recipes. I'll share with you my favorites in a 3-part series on "cooking in a mug"!

Indian Jambalaya

As a college student, I understand how expensive it can be to go out to dinner. Unfortunately, I have a deep love of Indian food, which I have never attempted to make myself--until now.

With just four simple ingredients, I was able to create a delicious, inexpensive Indian-inspired meal for under $15. (I also had tons of leftovers, which is a always major plus!)

Cooking Oil: The Good, The Bad, and The Grimy

There are many different oils to use when it comes to cooking. But which is best, and why?

The three most commonly used cooking oils are vegetable oil, olive oil, and canola oil.

Each oil can play a different role in the kitchen, but which one should you regularly use?

I decided to put vegetable oil, olive oil, and canola oil to the test by comparing them based on affordability, versatility, and smoking point.

Grandma's Banana Bread

There are few things in this world as fantastic as a recipe from grandma.

My grandmother happens to be one of my biggest inspirations, and the same goes for my friend Chris

Now, one of my other deep loves in this world--besides my grandma--is banana bread. When Chris gave me his grandma's delicious recipe for banana bread, everything felt right in the world.

Fast Breakfast Smoothie

I have a confession: I'm definitely not a morning person. When my alarm goes off, my first wish is that I could stay curled up in bed.

That being said, I'm a cereal kind of gal. Anything that's super quick and requires no brain power is perfect for me in the morning.

However, I have a super fast, easy breakfast smoothie recipe that I love. It's a fun way to wake yourself up (the sweet, fresh fruit as much as the sound of the blender!) even if you'd still rather be asleep.

Cooking in College

Hello world! My name is Kelsey Belomy, and I am a junior in college. My super Italian family has always been obsessed with cooking, and their love of food has passed down to me.

Unfortunately, I have disgraced my Italian heritage by not being a good cook--yet.

My goal, via this lovely blog, is to become a better cook. That's my ultimate, end all goal: know how to make food without needing recipes.

Pretty lofty mission, right?
