Speedy Vegetable Stir Fry


As is probably clear by now, I often have produce hanging around my kitchen that I struggle to use before it goes bad.

In this case, I had three perfectly wonderful bell peppers to use. 

Then, inspiration struck me: vegetable stir-fry.

This may sound intimidating for anyone unfamiliar with cooking Asian-style meals, but it actually couldn't be easier.

Recipe


3 bell peppers, any color
1/2 yellow onion
3-4 garlic cloves
1 T. sweet and sour stir-fry sauce
1 T. spicy stir-fry sauce
Canola oil

Heat canola oil, enough to coat the pan, on medium-high heat.

Chop three bell peppers into strips, then cut them into smaller, bite-size pieces. 

Dice half a yellow onion and three or four garlic cloves.

Throw onion in the pan. After a minute, add the garlic and the bell peppers.

Cook for three minutes, stirring constantly. Add one tablespoon sweet and sour stir-fry sauce, and one tablespoon spicy stir-fry sauce. Mix in.

Add more sauce as desired. Remove from heat and serve over rice.

[Note: You can use whatever vegetables you'd like in your stir-fry; I just happened to have lots of bell peppers on hand. But broccoli also works very well!]

Tip: Curl your fingertips away from the knife's blade when you cut. That way, if your knife slips, it'll only nick the backs of your fingers.


Why: Stir-fry is super fast, easy, and healthy. It makes a great leftover and it works as a stand-alone meal or as a side dish. It's also an easy way to add more vegetables to your diet, and it works as a single-dish meal if you choose to add any meat (or beans, if you're a vegetarian!).

Mess-ups and Missteps: I was a bit too generous with the canola oil when I coated the pan. You need to make sure you get the oil nice and hot, too, or else you'll have to cook your vegetables longer. Even if you add too much oil, never fear! You can always drain your meal in a pasta strainer, etc.

  1. I love stir fry, and if I ever become un-lazy enough to go grocery shopping I will definitely try this recipe. Love how easy it is, and how it can be adapted for vegetarian and carnivore needs alike :) (also the knife tip is important--I cut my palm with a knife last week and it's still giving me grief!)

    1. Haha definitely do! It's so delicious :D And yes! I posted this with vegetarians specifically in mind :) If different sauces were used, it could even be vegan!
