I was first introduced to this recipe by the movie "Moonstruck," starring Cher and Nicholas Cage (yes, you read that correctly). In the film, Cher and her super Italian family make her this delicious breakfast as a pick-me-up.
And seriously, this is the quickest, easiest, yummiest breakfast (or snack) ever.
With only two ingredients and some ever-fabulous canola oil, you can have a healthy breakfast in under 10 minutes. Read on for the recipe!

Recipe
1 slice thick French bread
1 egg
2 T. canola oil
Heat a small pan on low-medium heat. Add two tablespoons canola oil, enough to lightly coat the entire pan.
Cut one medium-sized slice of French bread. Use a shot glass or a glass with a small lip (I used a small wine glass) to 'cut out' the inside of the bread slice.
Place the bread slice in the pan and cook until lightly browned. Crack the egg in the middle of the slice of bread.
Cook until egg is done to your likeness. I like mine well-done, so I flipped my bread several times.

Tip: This recipe is so yummy, you'll definitely want another serving. Luckily for you, it's easy to double it!
Why: Eggs in a basket are fast, simple, and easy. They're also relatively healthy, since eggs are a great source of protein and canola oil is one of the healthiest cooking oils! (See my post here discussing its benefits!)
Mess-ups and Missteps: I added a bit too much oil to the pan, so my bread was still a little moist when I ate it. I didn't mind, though; it added to the flavor of the meal. However, I found, while I was cooking the bread, that it soaked up a lot of the oil. When you add your eggs, I suggest adding a little more oil to the pan to help them cook.
