Recipe
1/2 orange
2 small tomatoes
1/4 onion
2 sprigs cilantro
1 T. chipotle Tabasco sauce
Salt
Peel and slice the orange. Dice the tomatoes and the onion.
Put these ingredients in a small bowl. Tear up the leaves from two sprigs of cilantro and sprinkle over the mixture.
Add 1 tablespoon of chipotle Tabasco sauce and sprinkle with sauce.
Serve with chips or over chicken.

Tip: In order to easily dice your ingredients, keep your fingers over the upper end of the knife (away from the handle). Lift the lower end of the blade up and down quickly, creating a rocking motion.
Why: I'm always on the lookout for healthy snacks, because I often get hungry before dinner. This super fast, easy recipe is the perfect way to tide me over.

Kelsey! This recipe looks rockin'! And thank you for the knife tip! My grandmother would cry every time she would see me dice vegetables because she'd think I would lose a finger haha!
ReplyDeleteI don't like large chunks of tomatoes in my salsa. Could I throw them in the blender? Would I peel them first before doing so? This looks delicious!
Oh no! Knives are nothing to be scared of as long as they're used properly and are kept sharp (yes, you read that right! Dull knives are actually more likely to nick you than sharp knives, go figure).
DeleteIf you don't like large tomato chunks, I would actually suggest a food processor, if you have one (if not, a blender will work fine).
With regard to peeling the tomatoes first, you can leave the skin on them; they will process quite easily.
