Part 3: Coffee Cake in a Mug

I've always loved coffee cake. There's something about the sour cream and sugar combination--not to mention the crumb topping--that my tastebuds love.

Still, coffee cake requires a lot of sour cream and a decent chunk of time to make.

That's where the delicious Coffee Cake in a Mug comes in.

Recipe

1 T. butter, melted
2 T. sugar
1 egg
2 T. sour cream
1/8 t. vanilla
1/4 C. flour
1/8 t. baking powder




Crumb topping: 

1 T. butter, melted
2. T. flour
1 T. brown sugar
1 t. cinnamon

In a mug, mix together 1 tablespoon melted butter, 2 tablespoons sugar, 1 egg, 2 tablespoons sour cream, one-eighth teaspoons vanilla, one-fourth cup flour, and one-eighth baking powder. 
In a separate bowl, mix together 1 tablespoon butter, 2 tablespoons flour, 1 tablespoon brown sugar, and 1 teaspoon cinnamon. 
Add the crumb topping to the mug mixture. Microwave for one minute. Check the cake and microwave in 10-second increments if not done.

Tip: The crumb topping is the best part; when I make this again, I'm going to double the recipe.


Why: Coffee cake is delicious but time-consuming to make. This easy, fast in-a-mug version allows you to make coffee cake whenever you want!

Mess-ups and Missteps: The coffee cake was a bit dry, so I'll use less flour next time.
