Part 2: Banana Bread in a Mug!

One of the toughest parts of college living is using produce before it goes bad.

I personally struggle the most with bananas, and although I love banana bread, it does take a while to bake.

Cue Banana Bread in a Mug!

Recipe

3 T. flour
1/8 t. baking powder
1/8 t. baking soda
1 T. sugar (heaping)
1 egg
1/4 t. vanilla
1 t. canola oil
1 t. milk
1 overripe banana, mashed
Cooking spray
Pinch of salt

Spray mug with cooking spray. Mix together 3 tablespoons flour, one-eighth teaspoon each baking powder and soda, 1 heaping teaspoon sugar, and a pinch of salt. 
Add egg.
Mix in one-fourth teaspoon vanilla, 1 teaspoon canola oil, 1 teaspoon milk, and one overripe banana.
Microwave for 2 minutes. Check your mixture and microwave in 10-second increments until done.

Tip: A taller mug works best! Otherwise your banana bread will overflow.


Why: If it isn't already apparent, I love bananas! But as with most of my produce, I often find myself struggling to eat them before they go bad. Banana bread is a perfect way to use overripe bananas.
But what happens if you only have one overripe banana? (Most banana bread recipes call for 3-4). This is why banana bread in a mug is a life-saver.

Mess-ups and Missteps: Apparently banana bread and I don't get along--I again overcooked it. The original recipe called for 3 minutes of cooking, but I think less would've been fine.
