Speedy Vegetable Stir Fry


As is probably clear by now, I often have produce hanging around my kitchen that I struggle to use before it goes bad.

In this case, I had three perfectly wonderful bell peppers to use. 

Then, inspiration struck me: vegetable stir-fry.

This may sound intimidating for anyone unfamiliar with cooking Asian-style meals, but it actually couldn't be easier.

Couscous and Why It Rocks

Today's special post focuses on the wonder food that is couscous.

Besides its rocking name, couscous is one of the simplest foods you can possibly make. It's a great staple food and is common in Morocco, Libya, and many other countries.

However, perhaps some of my newbie chefs are intimidated by couscous' name. Like quinoa (which, by the way, is also delicious and super easy to cook), beginner cooks might be hesitant to make something they can barely spell, let alone pronounce.

But have no fear! Today's post will explain couscous and calm any concerns about making it. Read on!

Simple Eggs in a Basket

Today's recipe, as is probably unsurprising by now, is rooted in my Italian heritage: eggs in a basket.

I was first introduced to this recipe by the movie "Moonstruck," starring Cher and Nicholas Cage (yes, you read that correctly). In the film, Cher and her super Italian family make her this delicious breakfast as a pick-me-up.

And seriously, this is the quickest, easiest, yummiest breakfast (or snack) ever.

5 Tips for Healthy Eating When Traveling

Traveling is one of my favorite things to do. All the new people, experiences, and--most important--food always make trips rewarding opportunities for me to grow and learn.

That being said, I constantly struggle with healthy eating when I travel. Depending on where you go, it can be next to impossible to find something as simple as a green salad.

What Should I Eat When I Travel?

Hey everyone! I just got back from a week-long trip to London, England.

The trip itself was fantastic (there's me on the right, hamming it up!), but the vacation reminded me how difficult it is to stay healthy while traveling.
