With just four simple ingredients, I was able to create a delicious, inexpensive Indian-inspired meal for under $15. (I also had tons of leftovers, which is a always major plus!)

RECIPE
2 red or yellow bell peppers1 jar of Indian curry sauce
1 bag of microwavable frozen corn
1 package of precooked turkey sausage
Heat canola oil on low in pan. Chop peppers. Slice sausage into smaller pieces.
Lightly brown meat on medium heat. Add peppers.
While the peppers cook, heat corn in a microwave per package directions.
Add corn to the peppers and meat; cook for one minute.
Add the jar of Indian curry. Cook per instructions, about 15 minutes, stirring constantly.

Tip: Add rice to make this a more traditional jambalaya.
Why: I love Indian food and spice. This recipe has a good kick to it, and it has a nice combination of Indian flavors (from the curry) and Italian spice (from the sausage).
Mess-ups and Missteps: Nothing too major, but next time I will make sure the pan is hotter before I start cooking the sausage (it took a long time to heat up).
Also, just as a heads-up, this dish is not the prettiest to look at. It certainly won't be winning any food beauty contests, but I assure you, it tastes fantastic and has a nice kick.
